Characterization of paraffin oil emulsions stabilized by hydroxypropyl methylcellulose

► Paraffin oil was almost emulsified by HPMC above C*/20. ► Yield stress of the emulsion increased as the HPMC concentration increased. ► All emulsions behaved as solid-like viscoelastic matter.
