Survey of raw milk cheeses for microbiological quality and prevalence of foodborne pathogens

► 41 Raw milk cheeses made in the U.S. were analyzed for foodborne pathogens. ► Three samples contained Staphylococcus aureus; all other pathogens were negative. ► Current regulations for producing safe raw milk cheese appear to be adequate.
