Technological and probiotic role of adjunct cultures of non-starter lactobacilli in soft cheeses

► Lactobacillus plantarum I91 and Lactobacillus paracasei I90 did not change cheese composition. ► Peptidolysis was slightly increased in lactobacilli containing cheeses. ► Adjunct treated cheeses were at least as accepted as the controls by consumers. ► Oral administration induced benefic health effects at the gut mucosa of mice.
