چکیده انگلیسی
► Atlantic salmon grown in a recirculating aquaculture system contained off-flavors. ► The off-flavors were due to geosmin and 2-methylisoborneol in the salmon flesh. ► Salmon were depurated for a minimum of 10 days to provide acceptable tasting fish. ► Fillet quality was not compromised during the depuration period. ► Several geosmin-producing species of actinomycetes were isolated from the system.
