Image Analysis of Trout Cutlets*

This paper describes a method for segmenting and measuring the fat deposits of rainbow trout cutlets using digital photography. The proposed method is semi-automatic. A one class classifier and adaptive thresholding are used for segmentation. Experiments confirm the feasibility of the proposed approach.
