Preparation and evaluation of antioxidant peptides from ethanol-soluble proteins hydrolysate of Sphyrna lewini muscle
چکیده انگلیسی
► An efficient method was developed to acquire the ethanol-soluble proteins (EP). ► An efficient method was achieved to acquire the antioxidant hydrolysate (SEPH) of EP. ► Two peptides with high antioxidant activity were isolated from SEPH. ► The structures of peptides were determined as Trp-Asp-Arg and Pro-Tyr-Phe-Asn-Lys. ► The antioxidant activities of purified peptides were evaluated by six methods.
