Human milk is uniquely suited to human infants, both in its nutritional composition and in the nonnutritive bioactive factors that promote survival and healthy development. Fats are not only the main source of energy for fast-growing babies, but also are a structural component of cell membranes and substrates, indispensable for synthesis of important compounds with a broad spectrum of physiological activity. Inadequate content and composition of fats in breast milk, in particular essential fatty acids, can have serious consequences for the proper infant development. This article provides an overview on the composition, function and the source of variation of human milk lipids.
