► Organic acid concentrations in three pumelo varieties show different change patterns. ► Organic acid concentrations fluctuate instead of simply decreasing or increasing. ► Concentration fluctuations of sugars in the pulp are relatively stable. ► The sugar/acid ratio depend on the concentration of the organic acid.
