Separation and identification of zinc-chelating peptides from sesame protein hydrolysate using IMAC-Zn2+ and LC-MS/MS

► We give a sample of identifying metal chelating peptides using IMAC-Zn2+ and LC-MS/MS. ► Six zinc-chelating peptides were identified from sesame hydrolysates. ► The zinc chelating ability of Asn-Cys-Ser is higher than reduced glutathione. ► The sesame hydrolysates by trypsin could be potential metal chelating agents.
