چکیده انگلیسی
► High oleic-high stearic sunflower oil hard stearins were evaluated for CBEs formulations. ► Isosolid diagrams of palm mid fraction/sunflower stearins blends were obtained. ► Eutectic and softening effect were found for some mixtures. ► Selected CBEs were formulated according to isosolid diagrams and solid fat content at 25 °C. ► Isosolid diagrams of cocoa butter/CBEs showed full compatibility between these fats.
