Development of a new method for determination of exopolysaccharide quantity in fermented milk products and its application in technology of kefir production

► Reducing sugars method for hydrolyzed EPS can be used no matter to EPS composition. ► EPS quantity in kefir of different brands varied at 50-200 mg/l. ► Temperature optimum for kefiran production by kefir grains was about 30 °C.
