Characteristics of acid soluble collagen and pepsin soluble collagen from scale of spotted golden goatfish (Parupeneus heptacanthus)

► ACS and PSC could be extracted from the scale of spotted golden goatfish, a by-product. ► Pepsin was able to increase the extraction yield of collagen from the scale. ► ACS and PSC from the scale showed the high thermal stability.
