Enzymatic synthesis of galactooligosaccharides using pressurised fluids as reaction medium

► New results regarding synthesis of GOS in pressurised fluids. ► Rates greater than those obtained in normal liquid or gas phase reactions. ► Results showed significant differences in the maximum production among treatments. ► Supercritical CO2 as reaction medium has a great potential in GOS production.
