Biogenic amines and potential histamine - Forming bacteria in Rihaakuru (a cooked fish paste)

► Ten types of biogenic amines were found in Rihaakuru. ► High levels of histamine (>50 ppm) were detected from 50% of the product. ► Weak histamine-formers were detected from bacterial isolates. ► Histamine content probably originated during early processing.
