Les tests allergologiques s'orientent vers la détermination de valeurs qui prédisent une probabilité de réaction clinique pour réduire les indications du test de provocation par voie orale. Mais, dans la majorité des cas, le test de provocation est indispensable pour un diagnostic correct. Le regime d'éviction principe de base de la prise en charge d'une allergie alimentaire, s'accompagne de mesures de prévention et d' éducation.
