Mixed O/W emulsions stabilized by solid particles: A model system for controlled mass transfer triggered by surfactant addition

► We study the mechanism of oil transfer within mixed O/W emulsions. ► Change in oil droplet composition is detected by differential scanning calorimetry. ► No oil transfer is observed in mixed O/W emulsions prepared with solid particles. ► Surfactants are added to the mixed emulsion to trigger the oil transfer.
