Ferritin as a bionano-particulate emulsifier

Stable 'Pickering-type' emulsions were prepared using ferritin as a bionano-particulate emulsifier. Transmission electron microscopy studies confirmed the ferritin particles were adsorbed at the oil-water interface and stabilized the emulsions.
