Visualization of compound drops formation in multiphase processes for the identification of factors influencing bubble and water droplet inclusions in oil drops

▸ We were able to observe in real time the formation of compound drops A/O/W and W/O/W. ▸ By adding biomass as a solid phase, the air inclusion phenomenon increased to 61%. ▸ Direct collisions do not appear to be the main cause of bubble inclusions. ▸ A slight contact between the phases was needed for the inclusions to occur. ▸ This constitutes a first step to a deeper understanding of oxygen transfer mechanisms.
