Optimization of pressure-induced germination of Bacillus sporothermodurans spores in water and milk

► Heat-resistant endospores of Bacillus sporothermodurans were submitted to high pressure. ► We examine the effect of the process parameters on the germination rate in water. ► Germination was maximal after a treatment at 200 MPa for 30 min at 20 °C. ► Germination was optimized in water and in milk using a surface response methodology. ► Germination was induced at lower pressure and was faster in milk than in water.
