Antioxidants in volatile Maillard reaction products: Identification and interaction

► An approach for identifying antioxidants from complex mixture was introduced. ► DMHF, DDMP and CP were identified as the antioxidants in volatile MRPs. ► The antioxidant activity of DMHF, DDMP and CP was confirmed by UV-Vis analysis. ► There was existence of complex interaction between each two from DMHF, DDMP and CP.
