Discrimination of arabica coffee cultivars by electrospray ionization Fourier transform ion cyclotron resonance mass spectrometry and chemometrics

► A metabolomic approach was employed to study arabica coffee cultivars. ► The cultivars were grown under the same edaphoclimatic conditions in two regions. ► 20 compounds were identified by negative ESI FT-ICR MS with a mass error <2 ppm. ► Compounds related to each cultivar and region were revealed by PCA and PLS-DA. ► This methodology can be used for traceability and certification processes.
