► Interaction of BSA with gelatin in coil state leads to collapse gelatin chains. ► The collapsed gelatin molecules stabilize BSA against thermo aggregation. ► Gelatin in helix state forms a large complex particles with BSA. ► Trapping BSA molecules into the meshes of the gelatin network is observed.
