چکیده انگلیسی
The prevalence of food allergies in France is continually increasing. Treatment is generally based on avoidance of the offending allergen. Due to the absence of standardized labelling of consumer foods indicating contaminant allergens, avoidance can be difficult. However, while such contamination may be predicted and thus displayed, it can also arise by chance. Based on the VITAL system in Australia, which uses threshold values called “public health thresholds”, we have attempted to define thresholds suitable for use in France. A system such as the VITAL system could perhaps improve the day-to-day life of allergic patients, giving them access to a wider variety of products. Compliance with the proposed food labelling would reduce anxiety and the risk of accidents due to food allergy.
