Production of fructooligosaccharides by mycelium-bound transfructosylation activity present in Cladosporium cladosporioides and Penicilium sizovae

- Several filamentous fungi with transfructosylating activity were isolated from molasses and jams.
- The activity was mostly mycelium-bound.
- Cladosporium cladosporioides synthesized a mixture of inulin-type FOS, neoFOS and levan-type FOS.
- The disaccharide blastose (sucrose isomer) was obtained in high yield.
