Preparation and properties of rutin-hydrolyzing enzyme from tartary buckwheat seeds

► We isolated the rutin hydrolyzing enzyme (RHE) from Fagopyrum tataricum Moench seeds. ► Some properties of RHE were analyzed including molecular weight, pI and Km value. ► RHE has a specific catalytic activity toward rutin and hydrolysis product (quercetin) was further determined and confirmed. ► These results will provide a theoretical basis for future enzymatic preparation of quercetin.
