Chemical composition and functional properties of Ulva lactuca seaweed collected in Tunisia

►Ulva lactuca seaweed is a rich source of nutrients and fibre (54% w/w). ► The high content of mineral in this alga shows its high bioaccumulation capacity. ► The site under studies was contaminated by heavy metal (Zn, Cu and Cd). ► The functional properties (SWC, WHC and OHC) of this alga varied with temperatures.
