► GN and IF rhea muscles contained only fast-twitch oxidative-glycolytic fibres. ► IF rhea muscle had high postmortem residual glycogen concentrations. ► Rhea IF muscle presented high quantities of mitochondria. ► Glucose could be involved in post-slaughter meat oxidation.
