Preparative purification of bromelain (EC 3.4.22.33) from pineapple fruit by high-speed counter-current chromatography using a reverse-micelle solvent system

►We separated bromelain from pineapple fruit using HSCCC coupled with reverse micelle solvent system. ►Suitable separation conditions were all optimised step by step. ►The separated product showed high purity and good activity. ►The established separation protocol was effective and can be amplified.
