Modelling of low temperature wine-making, using immobilized cells

► A biocatalyst with immobilized yeast cells on corn grains was prepared. ► It was used for ambient and low temperature wine making. ► Immobilized cells produced wines with improved flavour compared to free cell systems. ► A model for the fermentation of immobilized cells was proposed.
