Development of a rapid method for the determination of the antioxidant capacity in cereal and legume milling products using the radical cation DMPD+
چکیده انگلیسی
► A method using DMPD+ to measure the antioxidant ability of cereals and legumes has been developed. ► The method is quick and not laborious without solid-liquid extractive phase of the antioxidants. ► The proposed method is effective to evaluate both hydro soluble and insoluble antioxidants. ► Repeatability and reproducibility were better than those with extractive phase, like precision.
