► Description and application of a method for monitoring NIRS models in ground meat. ► The methodology used has not been previously addressed in meat analysis. ► A large number of samples has been used for the different stages of the work. ► The methodology helps to get reliable NIRS predictions in meat routine analysis. ► The methodology helps to update calibrations and to detect real outlier samples.
