Applicability of 2-DE to assess differences in the protein profile between cold storage and not cold storage in nectarine fruits

► Non storage and cold storage nectarines have been studied by 2-DE and mass spectrometry. ► The majority of the differentially expressed proteins were characterized as allergens. ► The transcription level of allergens was assessed using quantitative RT-PCR. ► Allergen proteins were up-regulated in cold-treated nectarine by 2-DE and qRT-PCR.
