New glycoside derivatives of carnosine and analogs resistant to carnosinase hydrolysis: Synthesis and characterization of their copper(II) complexes

The newly synthesized carnosine derivatives result in very promising systems that are able to increase the carnosine bioavailability and to maintain the coordination ability of the copper(II) ion.
