Coupling lipophilization and amylose complexation to encapsulate chlorogenic acid

► Amylose complexes formation with chlorogenic acid was obtained by hydrothermal method. ► Lipophilization of chlorogenic acid allowed the formation of amylose complexes. ► Trapping of the aliphatic chain in the helical cavity of the amylose was checked.
