Chondroitin sulfate based nanocomplex for enhancing the stability and activity of anthocyanin

► A nanocomplex between chondroitin sulfate and anthocyanin was investigated. ► The nanocomplex was induced by intermolecular stacking interaction. ► The process does not need any inputting high energy or an organic solvent. ► The structural stability of the anthocyanin was maintained for 2 days at 37 °C. ► The system has a potential as a carrier for antioxidants or water-soluble drugs.
