Hydrophobically modified alginate for emulsion of oil in water

► Amphiphilic dodecanol alginate (DA) presented a fine emulsibility. ► The DA could be adsorbed on the oil/water interface of droplets in emulsion. ► The emulsions containing 0.8-1.2 wt% DA presented better stability.
