The risk-benefit analysis of dietary consumption is often based on semi-quantitative methods. The nutrient intakes are compared with nutritional recommended intakes, the exposures to contaminants are compared with health-based guidance values. Although these approaches allow to adjust the dietary recommendations, they do not allow to assess the health impacts of the diet. The quantitative approaches use life quality indexes such as the Quality Adjusted Life Year (QALY) or the Disability Adjusted Life Year (DALY). These tools, which are still in development, are not frequently used. These approaches come from the health economy area. The principle is to assess in a common metric both risks and benefits related to consumption, nutrient intakes and contaminant exposures, through dose-response relationships. Fish product is a good example for such analysis, because of its high essential fatty acid content and contaminant level, for which the impact on cardiovascular health and nervous system are well known. Some results are presented in this article.
