Method to estimate crystallinity in nixtamalized corn pericarp from sequential extractions and X-ray diffraction

• The amorphous and crystalline fractions in raw corn pericarp were obtained by sequential extraction.
• The corn pericarp diffractogram was reconstructed from the recovered fractions.
• The crystallinity of corn pericarp during nixtamalization was assessed.
• The method could be applied to assess crystallinity evolution in other systems.
