A chitinolytic endochitinase and β-N-acetylglucosaminidase-based system from Hevea latex in generating N-acetylglucosamine from chitin

An endochitinase and β-N-acetylglucosaminidase were isolated and purified from fresh rubber latex serum. Its general biochemical properties and the optimal combination needed for optimising the high-yield and exclusive production of N-acetylglucosamine from chitin are reported.
