Metabolism of galactosyl-oligosaccharides in Stellaria media - Discovery of stellariose synthase, a novel type of galactosyltransferase

In Stellaria media, the structure of two galactosyl-oligosaccharides (GOS) was unraveled and stellariose synthase, a 4Glc galactosyltransferase was partially purified. Based on these results, a hypothetical model is proposed to explain the complete GOS metabolism.
