Changes in texture, colour and fatty acid composition of male and female pig shoulder fat due to different dietary fat sources

► Male pigs have higher PUFA and lower MUFA, especially C18:1. ► VLC n-3 fatty acids were better conserved when additional dietary fat was used. ► Iodine value product seem to be a good feed quality parameter for fat firmness.
