چکیده انگلیسی
⺠We investigated the possibility detoxification of PHIP through diet. ⺠Dietary factor was the fermented red beet juice. ⺠Research was conducted in an animal model in rats. ⺠There was limitation of ACF changes in animals that fed fermented red beet juice. ⺠Showed reduced genotoxicity of intestinal contents in rats that fed fermented red beet juice. ⺠Reduced concentration of maloddialdehyde was found in the kidneys of rats fed with PhIP and fermented red beet juice. ⺠The presence of fermented red beet juice in the diet of rats increased the count of bacteria including Lactobacillus/Enterococcus and Bacterides-Prevotella group adhered to colonic epithelium.
