A study on microwave vacuum dried re-structured lychee (Litchi chinensis Sonn.) mixed with purple sweet potato (Ipomoea batatas) snacks

► Lychee can be blended with purple sweet potato to develop new MVD snacks. ► Increasing lychee proportion resulted in ɛ″ increasing and faster drying rate. ► The desirable ratio of lychee to purple sweet potato was determined to be 3:7. ► The optimal microwave power density was 4 W/g. ► The highest temperature of materials exceeded 60 °C only at the last minute.
