Lipase-mediated synthesis of water-soluble plant stanol derivatives in tert-butanol

► Water-soluble plant stanol derivatives were firstly synthesized in tert-butanol. ► Solvents with different log P values and different lipases were screened. ► The structure of the product was confirmed by FT-IR, MS and NMR. ► Experimental conditions were investigated.
