Déterminants socio-culturels collectifs et individuels à l'épreuve du temps : impact sur l'alimentation et la santé

While the various disciplines of prehistory and archaeology indirectly document past food, another more direct archive can also be examined: human skeletons. Despite of documentation, which can sometimes be, both quantitatively and qualitatively, unproductive and partial, one may use bone and dental markers, such as alveolar and dental lesions as well as chemical markers to restore dietary patterns at the individual level. Based on several examples, this article, which is part of an anthropology of “palaeodiet”, illustrates how the food and health parameters have always been intimately linked to the socio-cultural determinants.
