Intérêt nutritionnel des lipides laitiers

Dairy lipids are not well considered in adult human nutrition, because of their richness in saturated fatty acids. Yet, recent datas describe the biochemical functions and physiological effects of the different saturated fatty acids, showing their nutritionnal interest at moderate amounts. Moreover, the presence in dairy products of the other fatty acids such as monoenes, conjugated an polyunsaturated fatty acids is also discussed here.
