Biological activity from the gelatin hydrolysates of duck skin by-products

► We investigated the gelatin extraction from duck skin processing by-products using alkali and acid. ► Enzymatic hydrolysates from gelatin were scanned in vitro to search the biological activity. ► The enzymatic hydrolysates of gelatin from duck dermal processing by-products could be serve a natural antioxidant and antihypertension material.
