A 3-D computational fluid dynamics model for forced air cooling of eggs placed in trays

► A 3-D CFD model for cooling of eggs in multiple trays was developed and validated. ► Root mean square error for predicting center temperature of egg was within 1 °C. ► This model was integrated with Salmonella Enteritidis growth model to assess risk.
