Electrospinning of food-grade polysaccharides

Solutions of polysaccharides which are suitable for electrospinning turn out to be grouped in viscosity/concentration space between 1 and 8 Pa s (at a shear rate of 1000 s−1) and between 10 and 12 times the overlap concentration C∗.
