Two-phase olive mill waste composting: Community dynamics and functional role of the resident microbiota

► High quality compost was produced from a two-phase olive mill waste. ► Size and diversity of the resident microbiota were related to the different composting phases. ► The thermophilic phase showed the highest variation of bacteria number and diversity. ► Tannin-degrading bacteria were involved in the thermophilic phase of composting.
